Stuffed Aubergine Recipe
I’m on an obsessive journey at the minute of stuffing vegetables with various ingredients and this is my next recipe to add to this collection!
For every recipe I make my plan is to keep it as simple and tasty as possible so that you can get the best tasting food for the least amount of time in the kitchen.
250g lean mince
6 plum tomatoes
1/4 red onion
1 clove garlic
35g feta cheese
Sweet chili sauce
Preheat the oven to 180 degrees.
Cut the aubergine in half and scrape out the insides, leaving 1 cm around the edge.
Place in the oven for 15 minutes.
Whilst that’s cooking, brown off the mince and onions in a frying pan and add the tomatoes and garlic.
Take the aubergine out the oven and fill it with the mince mixture.
Crumble feta cheese on top and place in the oven for a remaining 10 minutes.
Serve on a plate with a dash of sweet chili sauce.
