Does that look like heaven or what!?
This isn’t the healthiest of recipes but if you have some cravings this is a great dinner to make instead of ordering pizza or a curry.
To speed up the time it takes to bake the sweet potato you can put them in the microwave for 5 minutes each side before putting it in the oven at 180 degrees.
Ingredients per serving:
1 medium sweet potato
1 rash bacon
Mozzarella and cheddar cheese
Bake the sweet potatoes in the oven for 40 minutes until soft. Cut them in half and spoon out the middle into a bowl leaving just the skins as an outer shell.
Add 40ml of milk to the scooped out sweet potato in the bowl and mix until its a creamy mixture. Spoon the contents back into the sweet potato skins.
Sprinkle the cheese on top and place back in the oven for 5 minutes.
Whilst the sweet potato is in the oven cook the bacon until its crispy and when fully cooked chop it into crumbs to top the sweet potatoes with.
Finish with a dash of chives for decoration.
