Yes you read that right. Sweet potato brownies, they are lovely and are about to become your next favorite snack.
Here it is:
600g Sweet potato
100g Brown flour
15 Pitted dates
80g Ground almonds
4 tbsp Cocao
3 tbsp Maple syrup
Trim the skin off the sweet potato and cut them up into small small squares. The smaller the quicker they will take to soften up.
Steam the sweet potato until they are very soft and falling a part.
Pour the sweet potato and pitted dated into a blender and blend until fairly smooth with only a few lumps in.
Scrap the mixture into a mixing bowl, pour the remaining ingredients in and mix thoroughly. Its its very dry add in a little water so it mixes better.
Get a baking tray out with baking paper on and spread the mixture evenly.
Place in the oven at 180 degrees for 20-25 minutes or until fully cooked.
Cut the sweet potato brownie into slices and voila!
